Victoria Sponge Cake
Made using a BBC recipe, but edited.
220g Butter
220g Caster Sugar
4 Medium Eggs
220g Self-Raising Flour
1) Beat the sugar and butter.
2) Beat the eggs then add to the sugar and butter.
3) Sift the flour and fold in to mixture. The mixture should be of dripping consistency - if not, add milk.
4) Add in a pinch of ground ginger and a drop of maple syrup (optional).
5) Divide between two cake tins and bake for 30mins on Gas Mark 4.
To join the layers of cake, I used lemon buttercream icing.
